Job Description

Responsible for managing assigned area, and Stores, Beverage & Kitchen requisition.
Maintain stocks of silverware, china, linen etc.
To account for spoilage of food and beverage items and breakage of glassware and china.
Menu engineering, identify the fast moving and slow-moving items
To plan and conduct food festivals and promotions to up sell the slow moving and non-moving items on the menu(s)
Timely buffet replenishment
Control food wastage, pilferage
Improve food & service quality.
Responsible for maintaining reasonable cost control in the department without compromising on quality
Banquet functioning
Analyze guest comments
Trainings, performance evaluation.
Conduct competition & market surveys.
Accounting of guest cheques & staff tips.
To train staff in the department
